We investigate the dynamics of phase separation of binary
mixtures that are driven into the miscibility gap by a continuous
very slow change of temperature. Subsequent to initial rapid
phase separation on submicrometer scales the driving suppresses
phase ordering and keeps the system close to the threshold of
mucleation and/or spinodal decomposition.      
 Based on experimental and numerical data three types of
instabilities are presented that can lead to oscillating
behavior. First theoretical results are summarized in a
non-equilibrium phase diagram, visualized by animations, and
compared to videos of the experimental and numerical results.
